Not anymore! Today I’m wrapping up my Fairy Tale series with the ever famous Snow White and the Seven Dwarfs fairy tale – Irresistable Baked Apple. Each recipe in this series represents a different fairy tale by the food that is featured. How can we forget the scene when the wicked queen tempts Snow White with the poison apple? If you don’t remember, read the fairy tale again to jog some of those childhood memories and read it to your kids too! Whether we have kids or not, we’re never too old to have some fun with fairy tales! Fairy Tale series: Snow White’s Irresistible Baked Apple

Ingredients:

1 large apple (I like Gala, Jonathon or Rome for baking)
1 TB chopped walnuts
1 TB raisins
1/8 tsp cinnamon
pinch nutmeg
1 tsp brown sugar
1 tsp coconut oil

How to Prepare

Preheat oven to 350 degrees. Wash the apple and cut approximately ¼ inch off of the top of the apple. Then core the apple using either a knife or melon scoop, but be sure to leave the bottom of the apple intact (approx ¼ inch) so the mixture doesn’t leak out of the bottom. Peel about ½ inch off the top of the apple to prevent the skin from splitting during cooking. Place apple in the center of a shallow baking dish and fill with water until level is approximately ¼ inch high. Set aside. In a small bowl combine walnuts, raisins, cinnamon, nutmeg and brown sugar. Fill the center of the apple with this mixture (it’s ok if some of the mixture overflows to the top of the apple). Put the coconut oil on top of the mixture in the center of the apple. Bake uncovered for approximately 35 minutes, or until apple is nice and tender. Remove from oven and let cool for 5 minutes. Enjoy! Yum.
