I’m a sucker for seasonal food not to mention ALLLL things pumpkin spice, however giving up my year’s worth of hard work in the gym to indulge and embrace the season is a little bit of a turn off. This guy is definitely the answer. Sugar free, Paleo, Dairy free and packed full of all of the favorite seasonal flavors, this Chia pudding works perfectly as a snack, breakfast or dessert. Enjoy!

PUMPKIN SPICE CHIA PUDDING

Ingredients
3/4 cup pumpkin purée
1.5 tsp pumpkin spice
1 &1/4 cups almond milk
3 tbs fresh ginger grated
2 scoops collagen protein (this one is optional)
2 tbs pepitas
2 tbs shaved coconut

How
• in a Bullet blender add almond milk, pumpkin purée, pumpkin spice, 2 tbs ginger, collagen protein (this one can be left out) and blend til combined
• Add Chia seeds and set aside in the fridge for 20mins
• While this is chillin’, pre heat a fry pan, lightly spray with coconut oil, and add the pepitas, left over ginger and coconut. Sauté for all of two mins to lightly toast/brown them, take off heat and set aside.
• Take chia mix out of the fridge, the chia should have expanded and it should be looking very pudding like. Pour pudding mix into two ramekins or stemless wine glasses (these look particularly impressive presentation wise!) Top with the toasted pepitas, coconut and ginger and these bad boys are ready to serve!
