Digestive enzymes to the rescue! These enzymes play key roles in our health by enabling our bodies to digest and utilize all the nutrients we ingest to the greatest extent possible. Moreover, these enzymes also play a key role in the elimination of toxins. Without them, the body cannot absorb nutrients from the food that we eat.

Where do these enzymes come from? You obtain most of your digestive enzymes from the food that you eat, and your body also produces enzymes of its own. Unfortunately, because of modern processing and preserving techniques, we do not obtain anywhere near the number of enzymes that we need. With that said, it is important that we eat foods containing these enzymes and take a digestive supplement (if needed).

Two fruits that contain high levels of digestive enzymes are the pineapple and papaya. So, it’s no coincidence that I am featuring them in today’s recipe: Pineapple-Papaya Chicken Kabobs. Not only are these kabobs delicious, they are so simple to make. Let the digestion begin!

PINEAPPLE-PAPAYA CHICKEN KABOBS

Ingredients:

Marinade:

1 TB liquid amino acids (can substitute light soy sauce)
2 tsp. each: sesame oil, lemon juice
1/2 cup papaya nectar
1 packet stevia (or your favorite sweetener)
1/2 tsp. each: garlic powder, cayenne pepper, ground ginger

Kabobs:

4 wooden skewers
12 oz. chicken breast, raw – cut into 2 in. cubes
1 each: red bell pepper, green bell pepper
2 cups fresh pineapple chunks

How to Prepare

Marinade: Put all marinade ingredients together in sealable Ziploc plastic bag. Seal and set aside.Kabobs: Evenly divide chicken and vegetable chunks into two portions. Arrange chicken and veggies onto skewers, alternating chicken and veggies – ea. portion should fit onto 2 skewers. Add fully prepped kabobs into Ziploc bag, seal bag, and shake to coat kabobs thoroughly. Put bags in refrigerator for 30 minutes (the longer it sits, the more flavorful the kabobs, so why not prepare the night before and let it sit overnight if you can?). Once kabobs are done marinating, fire up the grill! Place skewers onto grill for 15 min., or until cooked – turning once.Serve kabobs on top of brown rice (or not if you’re watching your carbs! Brown rice calories not included below). Enjoy!!
