This series will feature 3 recipes, each representing a different fairy tale by the food that is featured. You can enjoy the food yourself and share it with your kids using the fairy tale theme. This is so fun and exciting! Children can eat healthy without even knowing. How? When you make recipes that don’t sacrifice flavor. Today I’m starting this series with the famous Goldilocks and the Three Bears fairy tale. Who doesn’t remember the porridge scene: “This one is too hot, this one is too cold, but this one is juuuuust right!” Guess which one I’m making? You guessed it! “Just Right” Porridge. The hearty oatmeal combined with the sweet raisins and brown sugar, coupled with the rich flavor of walnuts and a hint of cinnamon will have you agreeing that I got this just right.

Fairy Tale series: Goldilocks and the Three Bears “Just Right” Porridge
Ingredients:
1/2 cup oats
1/2 cup egg whites
3/4 cup unsweetened almond milk (you can use water if you prefer)
1 pinch sea salt (optional)
1 TB raisins
2 tsp walnuts
1 tsp brown sugar
1/2 tsp cinnamon
1/2 scoop vanilla protein powder (I like the creamy texture of MHP Probolic SR)
How to Prepare
Put oats, egg whites, almond milk, sea salt, raisins, walnuts, brown sugar, and cinnamon in a microwaveable safe bowl and set microwave on medium-high heat for 5 minutes. After 2 minutes, remove and stir well with a spoon (it will still be watery at this point). Put back in microwave and repeat this process, stopping every 45 seconds to stir, until oatmeal is nice and thick (note, you might need less or more than 5 minutes depending upon your microwave, so judge accordingly). Add protein powder and mix until well blended and “just right” … Enjoy! Yum.
